3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Repeat Corrected During Inspection Observed raw foods being stored over ready-to-eat foods in the walk-in cooler. The person-in-charge moved the raw food to the bottom shelf.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.

3717-1-03.4(C) / Thawing - temperature and time control.
Corrected During Inspection Observed hamburger being thawed on the counter. Person-in-charge moved the hamburger to the walk-in cooler.
TCS food shall be thawed as required in this rule.

Complainant stated they ate at Mi Jalapeno on 5/8/16 around 6pm. Six people went to have Mother's day dinner. 3 of the 6 ate beef products and experienced vomiting and diarrhea symptoms for 12-16 hours. They symptoms developed between 8am and 10am on 5/10/16. The other 3 people did not experience symptoms and ate chicken products.

Upon inspection all hot and cold holding temperatures were in range. Beef is purchased from Sysco and U.S. Foods. At the time of inspection raw products were being stored over ready to eat foods in the walk-in cooler. Hamburger was thawing on the counter. Person-in-charge put the hamburger in the cooler and moved the raw food to the bottom shelf.
