Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed shredded cheese in the 2 door cooler in the kitcen that was not date marked. PIC stated is was opened on 4/8.

Equipment components are not intact, tight or properly adjusted. Observed a torn gasket on the door of the 2 door cooler in the kitchen.

3717-1-06.4(D) / Cleaning ventilation systems, nuisance and discharge prohibition.
Ventilation system not maintained. Observed visible dust accumulation on the vent cover in the dry storage area.
