Critical Corrected During Inspection Observed soups cooling to have no protective lids or hoods over them during the time of inspection. Food not properly protected from contamination by separation, packaging, and segregation. PIC placed lids on containers.

Corrected During Inspection Observed seasoning containers and ice cream syrup containers to not have labels on them during the time of inspection. Working food containers not properly labeled. PIC placed labels on them.

3717-1-04.8(E)(2) / Clean equipment and utensils stored in a self-draining position and covered or inverted.
Corrected During Inspection Observed measuring cup to not be store in an inverted fashion during the time of inspection. Clean equipment and utensils not stored in a self-draining position and covered or inverted. PIC inverted cup.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Corrected During Inspection Observed single-use articles to not be stored in an inverted fashion during the time of inspection. Single-service and single-use articles not protected from contamination. PIC flipped them.

Received a complaint stating that facility smelled dirty like the grease traps had not been cleaned in a long time. Did not observe the facility to "smell dirty" and grease traps are cleaned and maintained regularly. No violations pertaining to this complaint during the time of inspection.
