Critical Corrected During Inspection Observed employee putting on gloves without washing hands. Food employee(s) did not wash hands when required. Reminded employee that they must wash hands before donning single-use gloves.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Observed sanitizer concentration to be too low in the 3-bay sink during the time of inspection. Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. PIC remade sanitizer water.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Observed TCS food in the walk-in cooler to be one day past their use-by date during the time of inspection. Ready-to-eat, TCS food not properly discarded when required. PIC threw the food out.

3717-1-02.4(C)(17) / PIC: duties - ensure the facility has written procedures for responding to vomiting and diarrheal events.
Corrected During Inspection Did not observe a Norovirus procedure in the facility during the time of inspection. No written procedures for responding to vomiting or diarrheal events. Gave the PIC a copy of a Norovirus policy.
