Comments
Received a complaint stating that the facility is cooking with old food, using a microwave to heat up their food, and that the food the complainant ordered had made them sick. The complainant ordered the gumbo that contained white rice, shrimp, snow crab, and sauce. During the time of inspection I observed how the gumbo is made. The gumbo is made fresh every two days, meaning it is cooled down and reheated any time it is ordered within those two days. Each gumbo ingredient is kept in the cooler and used as needed, and the rice for the gumbo is made to order. Employees was their hands and wear gloves when preparing the ingredients, and the entire dish is cooked to a boil. Along with this, the dish is cooled down properly in an ice bath and reheated properly on a stove to 165 degrees. Lastly, I observed proper date marking on TCS foods during the time of inspection.
