Critical Repeat Corrected During Inspection Observed food items in the front hand sink during the time of inspection. Handwashing sink is being used for purposes other than handwashing. Sink was cleaned and discussed that hand sinks are for handwashing only during the time of inspection.

Critical Corrected During Inspection Observed scoop handles to be touching food at the salad station during the time of inspection. Food in contact with an unclean surface or linens. Handles were removed during the time of inspection.

Critical Corrected During Inspection Observed there to be no lid on the bacon in the hot holding unit during the time of inspection. Food not properly protected from contamination by separation, packaging, and segregation. PIC placed lid on bacon container during the time of inspection.

Observed cooler at the serving station and the stand-up cooler in the kitchen to not have internal thermometers during the time of inspection. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

Observed exit door in the kitchen to not be sealed properly during the time of inspection. Outer opening not protected.

3717-1-03.2(M) / Wiping cloths - use limitation.
Repeat Observed wiping cloths in the kitchen not being stored in sanitizer water during the time of inspection. Improper use and/or maintenance of wiping cloths.

Observed cooler at servers station to have damaged doors during the time of inspection. Equipment components are not intact, tight or properly adjusted.

Observed warewashing machine data plate to not be readable during the time of inspection. Warewashing machine does not contain an accessible, readable data plate.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed several pairs of scissors used for opening packages to not be clean during the time of inspection. Non-food contact surfaces of equipment are unclean.
