Critical Corrected During Inspection The person in charge was unable to demonstrate proper knowledge of food safety in regards to sanitizer types and uses. Both chlorine bleach and quaternary ammonium compound are used in this facility as sanitizers, and the PIC and all food personell must know which test strips to use and what the proper strengths should be to safely and effectively sanitize utensils/equipment.
Inspector informed PIC that the sanitizer the facility has in use for 3 comp sink and sanitizer buckets is quaternary ammonium compound and that chlorine test strips will not work; the QUAT test strips must be used. Both test strips wre present. When used, QUAT should be 200 ppm, and chlorine bleach should be 50 -100ppm.
