[?] A summary of the violations found during the inspection are listed below.

3717-1-03.2(U) / Food display - preventing contamination by consumers.
Critical Observed apples that were not protected from contamination. Discussed with the person-in-charge that after they are washed that they are wrapped. Food on display was not properly protected from contamination by consumers.
To prevent contamination, except for nuts in the shell or whole, raw fruits and vegetables that are intended for hulling, peeling, or washing by the consumer, food on display shall be protected from contamination as required by this rule.

3717-1-04(F) / Sponges - use limitation.
Observed sponges being used. The person-in-charge threw the sponge away.
To prevent pathogen harborage and illness, sponges may not be used in contact with cleaned and sanitized or in-use food contact surfaces.
3717-1-04.1(A) / Equipment and utensils - durability and strength.
Observed a single use cup stored in the dry mashed potatoes. A measuring cup that can be washed should be used.
Equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.
