Critical Repeat Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed sticker residue on clean dishes. PIC removed them and put the containers to be rewashed.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed sliced tomatoes that were cold holding above 41F. PIC voluntarly discarded them.

Observed clean equipment and utensils not stored in a self-draining position and covered or inverted to prevent contamination.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Equipment components are not intact, tight or properly adjusted. Observed damaged gasket on the lid of the make table next to the grill.

Corrected During Inspection Non-food contact surfaces of equipment are unclean. Observed the knives holder by the 3 bay with dust build up. PIC had it cleaned.

Repeat Corrected During Inspection Waste receptacles not covered properly. Observed dumpster lids and side door open. PIC closed them.

Physical facilities not maintained in good repair. Observed the a ligh shield in the kitchen that needs to be fixing.
