3717-1-04.2(I) / Sanitizing solutions - testing devices.
Critical There is no test kit available for measuring the concentration of the chlorine sanitizer. Since chlorine is used in the dishwasher, it is needed.
A test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided. Ensure that the strenght for chlorine is kept between 50-100ppm. Correct By: 02-May-2014
3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, using chemical sanitization - temp., pH, concentration, and hardness
Critical The concentration and/or temperature of a chlorine sanitizing solution did not meet the minimum requirements specified in the code. During inspection, no detectable chlorine was measured using chlorine test strips.
A chlorine solution shall have a minimum temperature based on the concentration and pH of the solution as specified in the code. Maintenance Mgr came to fix unit during inspection, the sanitzer line was clogged. Use test strips regularly in the dipping well to ensure a chlorine strength of 50-100ppm is reached.
