Critical Corrected During Inspection PIC said mechanical dishwasher was not dispensing soap properly and fluctuated in temperature. PIC explained he put in a work order and they were supposed to do maintenance that day. They do have a 3 bay sink to use in the mean time. Improper temperature of wash solution in mechanical warewasher.
