Critical Repeat Corrected During Inspection The deli employee stated the raw chicken breading unit is only rinsed after each use. The unit needs to be wash, rinshed, and sanitized every 4 hours when in use or if only doing once a day, after each use. Food equipment surfaces not cleaned at required frequency.

Critical Corrected During Inspection The mashed potatoes were holding at 118F during inspection. The employee stated they were put in a half hour ago. The employee took them out and reheated the potatoes to the proper cooking temperature to place in hot holding. Inspectors explained that hot holding units are only to hold food, not cook food. TCS foods not being hot held at the proper temperature.

Food in an RFE must be embargoed due to adulteration, misbranding, or baby food or formula is expired.

The cutting boards in the seafood area are heavily scored and damaged. Cutting blocks or boards cannot be effectively cleaned and sanitized.

Repeat Starbucks did not have a sanitizer test kit available at the time of inspection. No sanitizer test kit available.

Observed the meat grinder in the walk in meat cooler that is no longer in use by the facility. Unnecessary or nonfunctional items and /or litter on premises.
Meat grinder needs to be removed from the facility.

Observed the floor of the fruit and vegetable prep room that was soiled. The ceiling panels had debris on them. The manager said the ceiling panels are being replaced. Facility not maintained clean.
