[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Observed the ambiant air in the walk in cooler at about 48F and the internal temperatue of food at 45F. PIC stated maintenance will be contacted to come and check the cooler. TCS food items were removed from the cooler. TCS foods not being cold held at the proper temperature.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed food items in the cold holding case that were date marked for 10 instead of 7 days. PIC properly date marked them. Refrigerated, ready-to-eat, TCS foods not properly date marked.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Observed the door of the walk in cooler still needing repaired. Door is hard to shut and need repaired to avoid it not being closed properly and potentially affect the temperature inside the cooler. Equipment components are not intact, tight or properly adjusted.

Observed the walk in cooler not working properly. Temperature inside was above 41F at the time of inspection. PIC stated maintenance will be contacted to come in today and take a look. Equipment components are not intact, tight or properly adjusted.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed the door, fan unit and walls of the walk in cooler rusty. Non-food contact surfaces of equipment are unclean.

3717-1-05.4(N) / Covering receptacles.
Repeat Observed dumpster lid open. Observed the dumpster overflowing that lid would not close. Waste receptacles not covered properly.
