3717-1-02.4(B)(2)(k) / PIC: Demonstration of Knowledge - Explaining correct procedures for cleaning and sanitizing
Critical Corrected During Inspection PIC was unable to explain the proper sanitation levels required for the type of sanitizer they utilize at the time of inspection. Instructed PIC on proper levels the sanitizing solution should be reading to meet the required levels. PIC unable to demonstrate knowledge of cleaning and sanitizing.

901:3-4-15(B) / Embargoing of food due to adulteration, misbranding, or expired baby formula or baby foods
Critical Repeat Corrected During Inspection Observed 6 containers of Simple Truth Organic Milk based Powder, 5 larger containers of the same product, 4 Happy Baby Organic milk based powder and 2 Happy Baby Organic containers that were out of date at the time of inspection. Food in an RFE must be embargoed due to adulteration, misbranding, or baby food or formula is expired.
PIC disposed of all items immediately.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed a build up icing debris in the microwave in the bakery area at the time of inspection. Non-food contact surface(s) not cleaned at the required frequency.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Observed HOBART meat grinder in the meat processing room no longer in use at the time of inspection. Unnecessary or nonfunctional items and /or litter on premises.

3717-1-06.4(F) / Drying mops.
Corrected During Inspection Observed two mops leaning against the wall in the mop sink area at the time of inspection. PIC immediately placed the mops on proper hangers to hang and dry properly. Mops dried improperly.

3717-1-06.4(M) / Storing maintenance tools.
Observed items being stored in the mop sink at the time of inspection. Maintenance tools improperly stored.
