Holding Temperatures posted on refrigerator, logs kept daily on refrigerator.
This is a good habit to keep, make sure that employees know to notify head cook when temperatures are out of the acceptable range.
VI - P / Time/Temperature Controlled Safety Food
Grilled cheese sandwiches above acceptable cold holding temperature of 41 degrees F. This is to prevent the growth of bacteria. Sandwiches were discarded at time of inspection. Refrigeration unit has been modified to make sure it latches. Do not use this unit and have it removed from the kitchen.
