Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed shredded cheese at the Rushmore kitchen that was opened on 4/12 and was not date marked. PIC voluntarly date marked it to be used by 4/18.

3717-1-03.2(U) / Food display - preventing contamination by consumers.
Critical Repeat Corrected During Inspection Food display not properly protected from contamination by consumers. Observed Apples at the serving line of the Tri-Rivers Cafeteria that were not individually wrapped to prevent contamination from consumers.

3717-1-03.2(M) / Wiping cloths - use limitation.
Corrected During Inspection Improper use and/or maintenance of wiping cloths. Observed the sani bucket at the Rushmore kitchen with high concentration of Qac sanitizer. PIC changed the sanitizing solution to meet the required concentration.

3717-1-04.1(KK) / Food equipment - certification and classification.
Equipment not approved by a recognized testing agency. Observed the use of a non-commercial microwave at the Tri-Rivers Cafeteria.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed food debris inside the microwaves at the Tri-Rivers Cafeteria.
