3717-1-03.4(B) / Time/temperature controlled for safety food - slacking.
Corrected During Inspection Obsereved raw steak and chicken being held at room temperature to thaw before being cooked. PIC stated they had only been out for an hour and they were still partially frozen. Informed PIC of proper thawing methods. PIC placed both food items in the walk in cooler. Food improperly slacked.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Corrected During Inspection Observed bottles on the grill line without labeling on them at the time of inspection. PIC placed common name on the bottles. Working food containers not properly labeled.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed torn gaskets on the prep cooler by the grill and the true refrigerator by the window at the time of inspection. PIC stated they ordered them multiple times and have been cancelled each time. Equipment components are not intact, tight or properly adjusted.

3717-1-06.4(A) / Repairing.
Observed missing ceiling tile at the time of inspection. Physical facilities not maintained in good repair.
