Critical Corrected During Inspection Observed eggs in cooking line cooler to be stored above hamburger during the time of inspection. Food not properly protected from contamination by separation, packaging, and segregation. Chef re-arranged cooler storage so eggs and hamburger were stored correctly during the time of inspection.

Critical Corrected During Inspection Observed pancake mix to be sitting at 61 degrees during the time of inspection. TCS foods not being cold held at the proper temperature. Chef disposed of mix during the time of inspection.

Did not observe soap at servers station hand washing sink during the time of inspection. No soap at handwashing sink(s).

Observed hand washing sink in the severs station to not meet the require temperature during the time of inspection. Handwashing sink water below 100°F.

Observed cookies packaged in the facility to not be labeled with common name, ingredients, allergens, or net weight during the time of inspection. A food packaged in the facility not labeled.

Observed several pieces of equipment to be wet nesting and/or not inverted on the clean dish racks during the time of inspection. Clean equipment and utensils not stored in a self-draining position and covered or inverted.

Observed single use containers and coffee filters to not be stored in an a manner that protects them from contamination during the time of inspection. Single-service and single-use articles not protected from contamination.

3717-1-04(I) / Nonfood-contact surfaces - materials.
Observed nonfood contact surfaces of equipment to be sitting on cardboard during the time of inspection. Nonfood-contact surfaces constructed of unapproved materials.

3717-1-04.3(B) / Fixed equipment installation - spacing or sealing.
Observed employee bathroom sink to not be spaced in a manner sufficient enough for cleaning or sealed to the wall during the time of inspection. Fixed equipment not properly sealed or spaced for cleaning.

Repeat Observed several torn gaskets on both freezers and coolers throughout the facility during the time of inspection. Equipment components are not intact, tight or properly adjusted.

Observed there to be a non commercial microwave in the severs station during the time of inspection. Equipment not approved by a recognized testing agency.
