Critical Corrected During Inspection Observed the mechanical dishwasher with chlorine levels above the approved concentration. Food employees will use the composite sink with quat sanitizer to rinse and sanitize the dishes after they have been washed in the dishwasher. This will continue until the dishwasher has been repaired. Chlorine sanitizing solution at incorrect temperature and/or concentration.

Repeat Observed rust and chipped paint on the shelving in the walk-in cooler. Food employee stated the shelves are slated to be repaired during the summer. Nonfood-contact surfaces not easily cleanable.
