Critical Repeat Corrected During Inspection Observed there to be items with missing dates on them in the stand-up cooler during the time of inspection. Refrigerated, ready-to-eat, TCS foods not properly date marked. PIC had employee place dates on items during the time of inspection.

Repeat Observed torn gaskets on the hot holding unit and a cooler during the time of inspection. Equipment components are not intact, tight or properly adjusted.
