Critical Corrected During Inspection Observed lettuce in the walk-in cooler that was being held past its disposition date during the time of inspection. Ready-to-eat, TCS food not properly discarded when required. PIC immediately threw away the lettuce.

3717-1-04.1(H) / Nonfood-contact surfaces - cleanability
Observed the bottoms of several food trays to be chipped and not easily cleanable. Nonfood-contact surfaces not easily cleanable.
