3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Repeat Corrected During Inspection Observed a box of muffins in the walk-in cooler and lids in dry storage stored on the floor. Perosn-in-charge moved the items to a shelf.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
3717-1-04(A) / Multiuse utensils and food contact surfaces - material characteristics.
Observed a plastic contaniner with a broken corner. This dish can no longer be sanitized properly. Equipment and/or utensils contain improper materials.
To prevent contamination, materials that are used in the contruction of utensils and food contact surfaces may not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions shall be: Safe; durable, corrosion-resistant, and nonabsorbent; Sufficient in weight and thickness to withstand repeated warewashing; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.
3717-1-04.5(A)(2) / Cleanliness of food-contact surfaces of cooking equipment and pans.
Observed clean dishes with sticker residue. Cooking equipment or pan surfaces are dirty.
To prevent contamination, the food-contact surfaces of cooking equipment and pans shall be kept clean.
3717-1-06.2(E) / Handwashing signage.
Repeat Observed no handwashing sign posted at handwashing sink used by employees in the mens restroom.
A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees.
3717-1-06.4(F) / Drying mops.
Repeat Observed wet mops being stored in the mop sink. Wet mops should be hung to ar dry. Observed mops being dried using an unapproved method.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
