3717-1-04.2(B)(4) / Manual warewashing - two compartment sink requirements.
Repeat PIC is not using detergent/sanitizer in the two bay sink. PIC stated that she is washing and rinishing in the same sink and sanitizing in the next. Two-compartment sink used improperly for warewashing.

The following violation(s) have been corrected since the last inspection.
3717-1-04.1(DD)/Warewashing machines - automatic dispensing of detergents and sanitizers.
Sanitizer was not dispensing at the time of inspection. PIC stated that she is washing dishes, rinsing them, and sanitizing them manually. Warewashing machine does not automatically dispense detergent sanitizer and/or does not have a visual means to ensure detergent and sanitizer is automatically dispensed.
Comments
Facility does not have a backup method to wash, rinse, and sanitize dishes. Facility is being brought in for an administrative review. A letter will be mailed with a date and time of the review. Please bring in any suggestions for correcting the violation.

Facility is also serving pancake mix that is considered a TCS food. Facility is holding the TCS food outside of the cold holding window. Since they are holding this mix at room temperature, facility will need to be increased to a level 4 license. This will allow them to keep their pancake mix at room temperature for 4 hours. This change will take place at the beginning of next licensing season.
