3717-1-02.2 (D) / Hands and arms: where to wash
Critical Food employee was washing hands in the three bay sink. Food employee(s) not washing hands in approved handwashing sink or automatic handwashing facility.

3717-1-05.1(O)(1) / Using a handwashing sink - accessible at all times
Critical Observed the handwashing sink covered by a filing cabinet at the time of inspection. Handwashing sink not accessible.

3717-1-03.4(C) / Thawing - temperature and time control.
Corrected During Inspection Observed raw chicken thawing on the counter. Educated PIC that any TCS product needs to be thawed under refridgeration. PIC moved chicken to the reach in cooler. TCS foods not properly thawed.

3717-1-04.1(Y) / Temperature measuring devices.
Corrected During Inspection Did not observe a thermometer in the reach in cooler at the time of inspection. Inspector gave PIC thermometer to use for unit. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Corrected During Inspection Observed to go boxes stored upright which would allow contamination. PIC turned single use boxes over to prevent contaminaton. Single-service and single-use articles not protected from contamination.

3717-1-04.2(B)(1) / Manual warewashing - three compartment sink required.
Observed the three comp sink to be full of dishes and other items at the time of inspection. Three-compartment sink not available for manually washing, rinsing, and sanitizing of utensils.

3717-1-04.4(F)(1) / Warewashing sinks - use limitation.
PIC stated they are washsing hands in the 3 bay sink. Employees washing hands in warewashing sink.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Repeat Corrected During Inspection Did not observe chlorine test strips on site for use with bleach sanitizer. Inspector gave PIC some chlorine test strips. No sanitizer test kit available.
