3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed eggs to be stored above beef in cooler next to stand-up freezer in kitchen during the time of inspection. Food not properly protected from contamination by separation, packaging, and segregation. PIC moved eggs so they were properly stored during the time of inspection.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed TCS food in the cooler next to the fryer to not have been properly date marked after 24 hours during the time of inspection. Refrigerated, ready-to-eat, TCS foods not properly date marked. PIC placed date mark on item during the time of inspection.

3717-1-04.1(Y) / Temperature measuring devices.
Repeat Observed several coolers to be missing internal thermometers during the time of inspection. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Observed working oil container to not have a proper label on it during the time of inspection. Working food containers not properly labeled.

3717-1-03.2(I)(1) / Storage or display of food in contact with water or ice - packaged foods
Corrected During Inspection Observed alcohol bottle to be stored in ice that bartender uses to make drinks with during the time of inspection. Packaged foods improperly stored or displayed in direct contact with ice and/or water. PIC removed bottle during the time of inspection.

3717-1-04.3(B) / Fixed equipment installation - spacing or sealing.
Repeat Observed hand sink in front kitchen area to not be adequately sealed to the wall during the time of inspection. Fixed equipment not properly sealed or spaced for cleaning.

Comments
Received a complaint stating that the facility was excessively dirty in the kitchen, bathrooms, and dining areas. Upon inspection, did not observe facility to be dirty in the kitchen, bathroom, or the dining areas. Facility actively uses wiping cloths to wipe down surfaces in the kitchen areas. Additionally, facility cleans dining area as each customer leaves their tables, and the bathrooms were clean during the time of inspection. No violations pertaining to the complaint were observed during the time of inspection.

VII - Protection from Contamination: Observed food that was not properly protected from contamination by separation, packaging, and segregation.
VI - TCS Food: Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked.

VI - P - TCS Food: Observed hot foods being held at 135°F or above; cold foods being held at 41°F or below.
