Critical Corrected During Inspection Observed incorrect level or sanitizer concentration in the 3 bay sink as well as the sanitizer buckets. Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness.
PIC corrected violation on site and replaced and retested concentration levels.

Corrected During Inspection Observed clean equipment being stored on its side where contamination and debris can reach food contact surface. [51] Improper storage of cleaned equipment, utensils, and laundered linens.
