No written Employee Illness Policy available. Please create/post an employee illness policy consistent with the requirements of O.A.C. 3717-1-02.1(A)(2) and include the thirteen pathogenic organisms listed there. Anyone diagnosed with those organisms needs to notify the PIC and are not permitted to come to work until they receive medical clearance. The health dept must be notified also.
Inspector provided PIC with a copy of the pertinent guidelines.
IV / Demonstration of Knowledge
Discussed the hot holding/cooling requirements for leftover TCS food items. All TCS foods that are to saved must be cooled down properly: From a temp of at least 135 degrees F, the items must be brought to at least 70 degrees F within 2 hrs, and then to 41 degrees F or lower within the next 4 hrs. Use shallow trays and maximize surface area when cooling these foods down.
In conversation with PIC, it does not appear that internal food temps are being taken during the cooling down process. Please ensure the aforementioned time/temp requirements are adhered to.
