Critical Corrected During Inspection Spoke to PIC about cooling methods and how to properly cool TCS foods. Person in charge not ensuring proper cooling.

3717-1-04.5(B)(1) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Corrected During Inspection Observed in use food utensils not being cleaned every 4 hours. PIC took utensils back to be washed. Food equipment surfaces not cleaned at required frequency.

3717-1-03.4(D) / Cooling - temperature and time control.
Critical Corrected During Inspection Observed onion and pepper sauce and rice cooling on the back counter in a large container. PIC stated they were just put there and were cooling. I explained the process of cooling and she moved the sauce and rice to shallow containers and placed in the walk in. Improper cooling of TCS food.

Critical Corrected During Inspection Observed meat being held beside the grill without a time stamp. PIC stated when they are busy, the cook moves the meat off the grill into containers. PIC had cook move both beef and chicken back onto the grill. Improper use of time as a public health control (4 hours).

Did not observe a thermometer in the make table. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

Repeat Observed broken door latches on both the walk in cooler and walk in freezer. Equipment components are not intact, tight or properly adjusted.
