3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed chicken wraps in the small walk in cooler with discard date 10/20 and cream of chicken in the big walk in cooler with discard date 10/18. PIC discarded them.

3717-1-03.5(C)(2) / Food labels - packaged food
Label on a food packaged in-house did not contain all required information. Observed food items packaged in house without a net weight (chocolate cake, cinamon rool...)

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed build up on the vents cover of the small walk in cooler. Observed build up on the shleves of the big walk in cooler. Also observed build up in the gasket of the 2 door coller/freezer at the serving line.
