3717-1-03.2(D) / Food storage containers - identified with common name of food.
Corrected During Inspection Observed mies breading with no label. PIC labelled the container. Food storage containers are not properly labeled.
Working containers holding food or food ingredients that are removed from their original packages shall be identified with the common name of the food, except containers holding food that are readily and unmistakably recognized.
3717-1-04.2(G)(1) / Food temperature measuring devices - availability
Observed missing thermometer in walk in cooler. A food thermometer was not readily accessible.
To prevent foodborne illness, food temperature measuring devices shall be provided and readily accessible for use.
3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed water dripping in the walk in cooler. PIC put in a maintenance request. Equipment and/or components are not maintained in good working order.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-05.4(N) / Covering receptacles.
Observed dumpster that is not covered properly. Lids are broken and need replaceent. PIC put in an order for a new dumpster. Observed waste receptacles that were not covered.
Receptacles and waste handling units for refuse, recyclables, or returnables shall be: kept covered inside the FSO or RFE if they contain food residue and are not in continuous use, and after they are filled; or with tight-fitting lids or doors if kept outside.
3717-1-05.4(O) / Using drain plugs.
Observed dumpster with no drain plug. PIC put in an order for a new dumpster. Observed waste receptacle drains that did not have plugs.
Drains in receptacles and waste handling units for refuse, recyclables, or returnables shall have drain plugs in place.
