3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Repeat Observed three door prep-cooler in the kitchen area not holding at 41 or below. PIC stated all food items were just placed in there an hour ago. Informed PIC to place food items in walk in cooler and make sure they reach 41 degrees within three required time frame and to not use the three door prepcooler until it is consistently holding 41 or below. TCS foods not being cold held at the proper temperature.

Corrected During Inspection Observed no soap at handwashing sink in the kitchen at the time of inspection. PIC placed a bottle there.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Repeat Corrected During Inspection Observed no towels or drying device at the handwashing sink in the kitchen area at the time of inspection PIC placed paper towels there..

3717-1-04.1(Y) / Temperature measuring devices.
Repeat Corrected During Inspection Observed missing thermometer in the Reign total body fuel cooler at the time of inspection. PIC placed on in the unit at the time of inspection. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

3717-1-03.2(R) / Food storage - prohibited areas.
Corrected During Inspection Observed raw meats being stored above ready to eat foods and two boxes of meat on the floor of the in the walk in cooler at the time of inspection. PIC put food items in proper stacking order and picked the food items off the ground to be six inches off the floor. Food stored in prohibited area.

Repeat Observed torn gaskets on coolers throughout the kitchen area at the time of inspection. Equipment components are not intact, tight or properly adjusted.
