VR 04 / Monitoring procedures being followed
Repeat Asked PIC how often non refrigerated surfaces of heat treatment ice cream machine are being cleaned and they said they were cleaned once a day during the time of inspection. Non-refrigerated surfaces on heat treatment ice cream machine, such as dispensing nozzles, should be cleaned every 4 hours as per ODH variance approval letter. Facility not monitoring procedures being followed.

Repeat PIC and maintenance person were unable to produce the records for heat treatment on the ice cream machine during the time of inspection. Facility not monitoring procedures being followed.

Repeat Observed dishwashing procedures to be incorrect during the time of inspection. Dishes should be washed, rinsed, then sanitized. Utensils and/or equipment not properly rinsed.

Repeat Observed several cracked eggs in the bottom of egg cooler during the time of inspection. Non-food contact surfaces of equipment are unclean.
