Critical Corrected During Inspection PIC was unable to explain testing practices for the sanitizing bay of the three bay sink at the time of inspection. Intructed PIC on proper test kits to get and how to use them based on the type of sanitizer they use. PIC unable to demonstrate knowledge of cleaning and sanitizing.

Corrected During Inspection Observed no written procedures for responding to vomiting or diarrheal events at the time of inspection. PIC was given a policy to follow based on specified chemicals available..

3717-1-04.1(Y) / Temperature measuring devices.
Corrected During Inspection Observed no thermometer inside the walk in cooler at the time of inspection. PIC placed a thermometer inside. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Corrected During Inspection Observed no sanitizer test kit for the three bay sanitizer at the time of inspection. PIC eventually found the test kit boxed up in the back. PIC stated they switched companies for their sanitizer and had not opened the test kit. No sanitizer test kit available.
