Critical Repeat Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed sweet and sour sauce made on 8/15, cheese on 8/16 and 8/19 in the coolers at the serving area. PIC voluntarly discarded them.

Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed chili sauce made on 8/23, cheese on 8/26 and pizza sauce on 8/26 in the walk in cooler without date marking. PIC date marked them.

Facility does not have an employee with level two certification in food protection.

A food packaged in the facility not labeled. Observed in house packaged food items in the cooler at the serving area that were not labeled.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed build up on the gasket of the Hobart cooler at the serving area. Observed build up on the pepi drink machine at the serving area.
