Comments
We received two complaints for this facility. The first complainant stated the facility has maggots in their hot holding bins and the facility will not clean it out. Complainant also stated there is a sewage smell out of the kitchen, backroom and restrooms floor drains, facility had two fire hazards due to their grease trap, facility has poor food handling practices- food are not labeled and there is outdated food in the walk in cooler and shelves. Complainant also stated dishes are dirty, food is left overnight in warmers and employees are told in the morning to just add water.
Second complainant stated there is mildew and maggots in the cold holding bins, managers are not ServSafe Certified and that cold holding well has debris and build up.

We talked to the manager, Kent, about the complaints. Did not observe complainants' statements about the complaints. Did not observe maggots in cold or hot holding wells, did not observe sewage smell from the floor drains, observed food labeled and with proper date marking, did not observe build up and debris on dishes and in holding wells, did not observed food in warmers from overnight. PIC stated all food items are removed from warmers at the end of the day (some food items are discarded and some are cooled down). PIC also stated that hot/cold holding food items are removed from the wells at the end of the day and wells are cleaned. Containers from the wells are cleaned and new containers are used the next day. PIC stated they did not have any fire hazards. PIC stated food items are checked daily for outdated food items and dishes are cleaned frequently and as needed. Facility has at least one employee with a Manager Certificate in food protection and PIC stated all managers are required to have the manager certificate. Manager provided his certificate and 2 other managers certificates at the time of inspection. Reviewed facility date marking, labeling, food handling and cleaning frequency of hot/cold holding wells and dishes with the manager. No violation regarding the complaints was observed at the time of inspection.
