[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical Repeat TCS foods were not being held at the proper temperature. In the Ham Bunker and the Butter Wall had time/temp controlled for safety foods that had internal temperatures ranging from 42-46 degrees F. Most of the items in the Ham Bunker had temperatures at 41 degrees F or below, however the Johnsonville Brats and BarS hot dogs had temps above 41 degrees F.These items are being voluntarily discarded by Operator. Most of the TCS foods along the front of the Butter Wall had temps above 41 degrees F also, so Operator decided to pull these items from service as well.
Except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except for those roasts that are cooked as required may be held at 130° F), or at 41°F or less. Correct By: 02-Sep-2014
3717-1-04.2(A) / Equipment - cooling, heating, and holding capacities.
Critical Observed inadequate equipment for cold holding food. The Ham Bunker had a couple of dead zones where temps of only 42-45 degrees F are achieved. The Butter Wall has difficulty keeping TCS foods kept in front below 41 degrees F as well. The Butter Wall was appropriately stocked. The Butter Wall is scheduled for complete tear down/cleaning on Thursday morning. Please have the Ham Bunker service again as well.
Equipment for holding cold and hot TCS food shall be sufficient in capacity to provide food at the required food temperatures.
