Critical Corrected During Inspection Observed lettuce date marked 12/11-12/14 in the walk in cooler and pudding date marked 12/12-12/15 in the cooler in the kitchen. PIC voluntarly discarded them. Written procedures and plans are not maintained and implemented.

Critical Corrected During Inspection Observed protein trays in the cooler at the self service area that were made on 12/16 without date marking. PIC date marked them. Refrigerated, ready-to-eat, TCS foods not properly date marked.
