3717-1-04.5(A)(1)/Cleanliness of equipment food-contact surfaces and utensils.
Observed heavy build up of food debris on the top and inside the stove. To prevent cross contamination all food contact surface should be cleaned to sight and touch. PIC stated he will have employees clean. Equipment food-contact surfaces or utensils are dirty.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.
3717-1-04.5(B)/Equipment food-contact surfaces and utensils - cleaning frequency.
Observed built up food and tableware underneath the dishwasher conveyor belt. To prevent food borne illness and also keep pest away food equipment shall be cleaned to sight and touch. PIC stated he will have employees clean. Food equipment surfaces are not cleaned at the required frequency.
Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified in this rule.
