3717-1-02.4(C)(7) / PIC: duties - ensure employees are properly cooking TCS foods.
Critical Corrected During Inspection Person in charge did not ensure employees are properly cooking TCS foods and/or using thermometers as required. Person in charge stated that he had a new cook and that is why the chicken wings were left out on the counter beside the microwave.
Person in charge said he would make sure the new cook was trained not to do that anymore.

Critical Repeat Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Ice scoop handle laying in ice.
PIC adjusted scoop so that handle not laying down in ice.

Critical Repeat Equipment food-contact surfaces or utensils are unclean. Both Ice machines had build up of debris inside on metal guard and door where ice comes into contact with.

Critical Corrected During Inspection Improper reheating of food for hot holding. Observed bean soup in pot on stove with heat turned off. Internal temperature of 129 after being stirred.
PIC had cook turn the heat back on to continue heating to the proper temperature.

Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed open bag of raw chicken wings setting out on counter beside the microwave out of temperature.
PIC disposed of the whole bag.

Critical Repeat Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed shredded chicken/pepper mixture with a date mark of 11/17/23 past the 7 day limit in the walk in refrigerator. Observed salsa with a use by date of 11/13/23 in the make station.
PIC disposed of the expired item.

Critical Repeat Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Homemade salsa containers made more than 24 hours ago were not date marked.
PIC put date mark on the Salsa.

Repeat Corrected During Inspection No towels or drying device at the handwashing sink(s).

Repeat Corrected During Inspection Improper storage of food items. Observed melon, chille relleno, salsa, strawberries uncovered in the salad make station.

Non-food contact surfaces of equipment are unclean. Observed accumulation of water on floor of walk in cooler. Noted a foul odor in the walk in cooler.
