Critical Corrected During Inspection Breaded chicken nuggets setting in bags on rack next to oven in bags were temperature probed and found to be 70 degrees F. PIC asked cook if they had been cooked, she said yes, they were cooling down. Could not say how long they had been seeting out. PIC disposed of chicken. Improper cooling of TCS food.

Critical Corrected During Inspection Spaghetti sauce dated 5/9/23 in the refigerator. PIC disposed of. Ready-to-eat, TCS food not properly discarded when required.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Warewashing machine not working. Using manual 3 compartment sink. Equipment components are not intact, tight or properly adjusted. Part is on order.
