[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(C) / Thawing - temperature and time control.
Corrected During Inspection Observed frozen chicken was being thawed at room temperature during inspection. Employee stated it would be thawed for a half hour before being placed in oven. TCS foods were not properly thawed. The chicken was recently taken out of freezer and measured 32 degrees F. The frozen chicken was placed in cooler to properly thaw.
TCS food shall be thawed as required in this rule. Correct By: 04-Jun-2018
3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Observed noncommercial equipent items in the dry storage area. One was a donated rice cooker and a crockpot. The PIC said she would removed the items from the room immediately. Equipment is not approved by a recognized testing agency.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
The cooler door seal was observed soiled at time of inspection. Non-food contact surfaces of equipment are dirty.
Nonfood-contact surfaces of equipment shall be kept clean.
