Critical Corrected During Inspection Observed two packages of bologna that was opened yesterday that were marked for 14 days. The person-in-charge changed the date on the products. Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one.

Critical Corrected During Inspection Observed pork & beef bologna that expired on 11/27 that was not discarded. The person-in-charge voluntarly discarded. Ready-to-eat, TCS food that had been date marked was not properly discarded when required.
To prevent illness, refrigerated, ready-to-eat TCS food that has been date marked in the facility shall be discarded if it: (a) exceeds the temperature or time specified in (G)(1) of this rule, except the time the food is frozen; (b) is in a container or package that does not bear a date or day; or (c) is marked with a date or day that exceeds the time and temperature combination specified in (G)(1) of this rule.

Critical Repeat Corrected During Inspection Observed build-up on the produce sprayer nozzel. The employee cleaned off the sprayer. Equipment food-contact surfaces or utensils are dirty.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.

3717-1-03.5(B) / Honestly presented.
Repeat Observed the ham sale tags in the deli without the full name of the product. (Private Selection Wildflower Honey Ham Water Added, Brown Sugar with Natural Juices, Cooked Ham and Water Product).
Food shall be offered for human consumption that does not mislead or misinform the consumer. Food or color additives, colored overwraps, or lights may not be used to misrepresent the food. The sale of kosher foods shall be in accordance with section 1329.29 of the Revised Code.

The donuts in the bulk storage were not individually labeled with each type of donut. Bulk food display for customer self-service was not properly labeled.
Bulk food that is available for consumer self-dispensing shall be prominently labeled with the information specified under (C)(2) of this rule.

Observed the use of plastic dishes that were cracked or broken in the seafood department.

Observed the use of a non-commercail microwave in the deli/ bakery. Equipment is not approved by a recognized testing agency.

Did not observe a thermometer inside the large bakery case.
A properly designed temperature measuring device as specified in this rule shall be located in the warmest part of a cooling unit or the coolest part of a food warming unit.

Observed the bakery oven racks and baking pans with build-up. Non-food contact surfaces of equipment are dirty.

3717-1-04.8(A) / Equipment and utensils - air-drying required.
When asking an employee how they clean the saws in the meat room, they stayed they will use a towel to dry to saw when they are in a rush to get it done quickly. Equipment and utensils are not being air dried.
After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food and utensils, and may not be cloth dried.

Discussed with the person-in-charge about reheating foods at in the deli. Currently, this facility is not licensed to reheat foods. They will stop reheating foods.
