FOOD DEFENSE - A food defense booklet (NYSHD’s Food Defense Strategies) and possible vulnerable points to protect food from intentional contamination were briefly discussed.

A person must be designated as a "person in charge" for each shift (all hours of operation) and that person must be trained in food safety with a level 1 food safety training class or something equal or greater.
