3717-1-04.1(C) / Food-contact surfaces - cleanability
Critical Food contact surfaces were not easily cleanable, or not designed/constructed properly. The green mat that the cups set on is not cleanable.
Multiuse food-contact surfaces shall be smooth and accessible for cleaning and inspection without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools. To prevent the contamination of clean utensils with pathogens that could cause a foodborne illness, REPLACE THE GREEN MATTING WITH A MATERIAL THAT IS CLEANABLE SUCH AS PLASTIC BAR MATTING. 3717-1-04.5(A)(1) / Cleanliness of equipment food-contact surfaces and utensils.
Critical Equipment food-contact surfaces or utensils are dirty. The inside of the ice machine is dirty.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. To prevent the contamination of ice with pathogens that could cause a waterborne illness, CLEAN THE INSIDE OF THE ICE MACHINE REGULARLY. WIPE THE INSIDE PLASTIC BAFFLE ONCE A WEEK WITH A SANITIZED CLOTH AND EMPTY THE ICE MACHINE MONTHLY AND WASH AND SANITIZER THE ENTIRE INSIDE. Correct By: 20-Sep-2014

Equipment is not approved by a recognized testing agency. The microwave oven, refrigerator, and possibly the frier are for residential use only.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency. REPLACE THE REFRIGERATOR, MICROWAVE OVEN AND ,IF NEEDED, THE FRIER WITH APPROVED EQUIPMENT (NSF CERTIFIED EQUIPMENT IS APPROVED IF USED AS DESIGNED). Outdoor refuse storage surface is not properly constructed, and sloped to drain. The dumpster sets on gravel.
An outdoor storage surface for refuse, recyclables, or returnables shall be constructed of nonabsorbent material and shall be smooth, durable, and sloped to drain. PLACE THE DUMPSTER ON THE CONCRETE PAD. Correct By: 20-Oct-2014

Observed no handwashing sign(s) posted at handwashing sink(s) used by employees. The bathrooms do not have hand washing signs.

Keep the wet towel/cloths in a bucket of sanitizer between uses. Do not leave wet cloths on the counter.

FOOD DEFENSE - A food defense booklet (NYSHD’s Food Defense Strategies) and possible vulnerable points to protect food from intentional contamination were briefly discussed. (Facility security, employee training and restrictions, and food storage, handling, and control were reviewed).

PERSON IN CHARGE (PIC) – Printed information about allergy awareness, critical food handling items, and level 1 food safety training was provided to the person in charge (PIC).

EMPLOYEE HEALTH - A model health policy was provided to the PIC and reviewed. Employees may not work with the food when ill with diarrhea, vomiting, sore throat with fever, or jaundice. Report to the health department if an employee has a doctor confirmed foodborne illness.
