Observed outdoor refuse containers without tight fitting lids, doors, or covers. The dumpster lid was left open.

Repeat Floors, walls, and/or ceilings were not smooth and easily cleanable. The walls and ceiling in the walk in cooler are rough concrete.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. PAINT OR COVER THE WALLS AND CEILING IN THE WALK IN COOLER WITH A SMOOTH DURABLE EASILY CLEANABLE SURFACE. Correct By: 12-May-2015

FOOD DEFENSE - A food defense booklet (NYSHD’s Food Defense Strategies) and possible vulnerable points to protect food from intentional contamination were briefly discussed. (Facility security, employee training and restrictions, and food storage, handling, and control were reviewed).

Canned oranges should be pre-chilled to 41 degrees before placing them on the serving line.
