3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Observed food that was not properly protected from contamination by separation, packaging, and segregation. OBSERVED: Raw shell eggs above lettuce . ready to eat foods. To prevent contamination which could cause a foodborne illness. Raw animal foods shall be stored below or separately from raw and ready to eat foods. Corrected: employee placed eggs on bottom shelf.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. Food shall be protected from cross contamination by: (1) separating raw animal foods during storage, preparation, holding, and display from: (a) raw ready-to-eat food, including other raw animal food such as fish for sushi or molluscan shellfish, or raw ready-to-eat vegetables and; (b) cooked ready-to-eat foods; (c) frozen, commercially processed and packaged raw animal foods may be stored or displayed with or above frozen, commercially processed and packaged ready to eat foods; (2) except when combined as ingredients, separating types of raw animal foods from each other during storage, preparation, holding and display by: using separate equipment for each type; arranging each type of raw animal food in equipment so that cross contamination of one type with another is prevented; or prepare each type of food at different times or in separate areas; (3) not storing and displaying comminuted or otherwise non-intact meats above whole-muscle intact cuts of meat unless they are packaged in a manner that precludes cross contamination; (4) cleaning equipment and utensils as specified under paragraph (B)(1) of 3717-1-04.5 and sanitizing as specified under paragraph (C) of 3717-1-04.6 of this code; (5) cleaning hermetically sealed containers of food of visible soil before opening; (6) protecting food containers that are received packaged together in a case or overwrap from cuts when the case or overwrap is opened; (7) storing damaged, spoiled or recalled food being held in the FSO or RFE as specified in (D) of 3717-1-06.3; (8) separating fruits and vegetables, before they are washed as specified under (G) of this rule; and (9) storing food in packages, covered containers, or wrappings as required.
