3717-1-06.4(A) / Repairing.
The physical facilities are not being maintained in good repair. Observed the floor drain in the raw chicken walkin cooler to be damaged & no longer cleanable.
The physical facilities shall be maintained in good repair. Repair or replace the broken floor drain cover in the raw chicken walkin cooler.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris on the raw chicken walkin cooler floor near the drain. Observed a build-up of dirt & debris under the 3 comp sink and utility sink.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Clean the floors in the raw chicken cooler and under the 3 comp sink & utility sink.
