3717-1-03.4(E)/Cooling methods - temperature and time control.
Observed improper method for cooling TCS foods. The cooked beef was cooling in a large container about 6" by 8" in the walk in cooler.
Cooling shall be accomplished in accordance with the time and temperature criteria by using one or more of the methods based on the type of food being cooled as required in this rule. To prevent the rapid grow of pathogens in the beef which could cause a foodborne illness, COOL THE BEEF ON TRAYS NO MORE THAN 1 INCHES DEEP IN THE WALK IN COOLER OR (FOR A HOUR) IN THE FREEZER. THE BEEF WAS PLACED ON TRAYS AND PUT BACK IN THE WALK IN COOLER AT THE TIME OF INSPECTION. Correct By: 31-Mar-2014
3717-1-06.4(B)/Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris. The ceiling and shelves in the walk in Cooler are dusty.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. CLEAN THE CEILING AND SHELVES IN THE WALK IN COOLER. Correct By: 05-May-2014
3717-1-07(B)/Working containers - common name.
Observed working containers of poisonous or toxic chemicals that were not properly labeled with the name of the material. The spray bottle in the women's bathroom was not labeled.
Working containers used for poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. To prevent a possible misuse of a chemical that could lead to a food poisoning and other type of poisoning, LABEL THE SPRAY BOTTLES WITH THE NAME OF CONTAINS. THE BOTTLE WAS LABELED AT THE TIME OF INSPECTION. Correct By: 31-Mar-2014
