Critical CorrectedDuringInsp A thermometer capable of accurately measuring the temperature of thin foods was not available. The thin probe thermometer was not working.
A food temperature measuring device with a suitable small-diameter probe shall be provided and readily accessible to measure the temperature of thin foods. To ensure tcs food is cooked to the required temperature so bacteria is destroyed, REPLACE THE BATTERY IN THE YELLOW THIN PROBE THERMOMETER. THIS WAS TEMPORARILY CORRECTED AT THE TIME OF INSPECTION BY OBTAINING A LOANER. Correct By: 15-May-2014

Repeat Observed outdoor refuse containers without tight fitting lids, doors, or covers. The dumpster lid was left open.
Receptacles and waste handling units for refuse, recyclables, or returnables used outside with materials containing food residue, shall be designed and constructed to have tight-fitting lids, doors, or covers. KEEP THE DUMPSTER LIDS CLOSED.
3717-1-06.1(M) / Outer openings - protected.
Observed an outer opening, window, or door without proper protection against the entry of insects and rodents. The door sweep does not seal at the bottom of the screen door.
To prevent contamination, outer openings of an FSO or RFE shall be protected against the entry of insects and rodents as specified in this rule. ADJUST THE SCREEN DOOR SWEEP SO IT SEALS THE BOTTOM OF THE DOOR WITH THE THRESHOLD. Correct By: 22-May-2014

Observed no handwashing sign(s) posted at handwashing sink(s) used by employees. The women's bathroom did not have a handwashing sign.

The light intensity in a customer self-service area, inside equipment, toilet room, or areas used for hand washing or equipment or utensil storage was less than twenty foot candles. The light was out in the reach in freezer.
The light intensity shall be at least twenty foot candles (two hundred fifteen lux): at a surface where food is provided for customer self-service such as buffets or salad bars or where fresh produce or packaged foods are sold or offered for human consumption; inside equipment such as reach-in and under-counter refrigerators and at a distance of thirty inches (seventy-five centimeters) above the floor in toilet rooms and in areas used for hand washing, warewashing, equipment storage, or utensil storage. REPLACE THE LIGHT BULB IN THE REACH IN FREEZER. USE A SHATTERPROOF BULB. Correct By: 22-May-2014
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris. The basement floor and the outside of the cooler are dirty.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. CLEAN THE FLOOR AND OUTSIDE OF THE COOLERS IN THE BASEMENT. Correct By: 22-May-2014

-the ceiling tile in the basement has partly been replaced.
