3717-1-03.2(U) / Food display - preventing contamination by consumers.
Critical CorrectedDuringInsp Food on display was not properly protected from contamination by consumers. The apples and pears were in the customer cooler exposed to customers and not wrapped or under a sneeze guard.
To prevent contamination, except for nuts in the shell or whole, raw fruits and vegetables that are intended for hulling, peeling, or washing by the consumer, food on display shall be protected from contamination as required by this rule. EITHER WRAP THE APPLES AND PEARS OR KEEP THEM UNDER A SNEEZE GUARD. THIS WAS COORECTED AT THE TIME OF INSPECTION BY MOVING THE FRUIT. Correct By: 28-Feb-2015

3717-1-03.5(C)(3) / Food labels - bulk food
Bulk food display for customer self-service was not properly labeled. The container of flour on the student side was not labeled.
Bulk food that is available for consumer self-dispensing shall be prominently labeled with the information specified under (C)(2) of this rule. LABEL THE CONTAINER OF FLOUR ON THE STUDENT SIDE. Correct By: 28-Feb-2015
3717-1-04.4(M) / Mechanical warewashing equipment - sanitization pressure.
Repeat The water flow pressure in a warewashing machine is not adequate. The water pressure on the final rinse of the automatic dishwasher on the student side was 10 psi.
The flow pressure of the fresh hot water sanitizing rinse in a warewashing machine, as measured in the water line immediately downstream or upstream from the fresh hot water sanitizing rinse control valve, shall be within the range specified on the machine's data plate and not be less than five pounds per square inch or more than thirty pounds per square inch. ADJUST THE STUDENT SIDE DISHWASHER FINAL RINSE WATER PRESSURE TO THE MANUFACTURER'S REQUIRED RANGE OF BETWEEN 15 AND 25 PSI. UNTIL FIXED, HAND SANITIZE THE UTENSILS. Correct By: 28-Feb-2015
3717-1-06.4(A) / Repairing.
The physical facilities are not being maintained in good repair. There are lights out in both of the 4 door coolers.
The physical facilities shall be maintained in good repair. REPLACE THE LIGHT BULBS IN THE 4 DOOR COOLERS. USE SHATTERPROOF BULBS OR PLACE COVERS OVER THE BULBS. Correct By: 03-Apr-2015
3717-1-06.4(F) / Drying mops.
Observed mops being dried using an unapproved method. The mop on the student side was not hug up after use.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. HANG THE MOP UP AFTER USE ON THE STUDENT SIDE. Correct By: 28-Feb-2015

Keep the handles of scoops and ladles facing the same way in the drawers.

The ceiling tile in the student side mop room and bathroom are not smooth and non-absorbent. These should be replaced with smooth type ceiling tile like the kitchen ceiling tile.

The lighting over the student side prep cooler is not adequate. An additional 2x2 or 2x4 light should be installed.

FOOD DEFENSE - The food dense checklist (NYSHD’s Food Defense Strategies) was provided

LEVEL 1 FOOD SAFETY TRAINING – At this facility, PICs on all shifts ARE NOT REQUIRED, but encouraged to be certified in Level 1 Food Safety.
